This is the upgrade you need in your life...Think crispy bacon on the outside, tender baked potato in the middle, and a rich, cheesy brisket filling that eats like BBQ-loaded mashed potatoes - except better because it’s stuffed inside a potato and wrapped in bacon. The jalapeño adds just enough bite, the Sweet & Smoky Rub ties everything together, and that vinegar-based sauce on top cuts through the richness perfectly.

Step-by-Step Recipe Video:
Ingredients:
Potatoes & Wrap
5 large russet potatoes
Brown butter spray (or olive oil)
Salt (for skins)
10 slices thick cut bacon
Toothpicks (for securing bacon)
Filling
1 lb chopped brisket (Full Brisket Recipe)
8 oz cream cheese, softened
1 cup sharp cheddar cheese
½ cup sour cream
1 jalapeño, diced
1 tbsp My Stew’s BBQ Sweet & Smoky Rub
Finishing Toppings
Extra sharp cheddar cheese
Green onions, sliced
Instructions:
1) Preheat the grill
Set your grill, oven, smoker or pellet grill to 375°F. (I ran this cook with Royal Oak charcoal + hickory pellets on my pellet grill.)
2) Cook the potatoes
Wash the russet potatoes and poke several holes in each potato (don’t skip this unless you enjoy surprise potato fireworks).
Spray with brown butter (or drizzle olive oil), then salt the skins. Place directly on the grill grates and cook 45–60 minutes, until fork tender.
3) Mix the brisket filling
In a bowl, combine:
cream cheese
sharp cheddar
sour cream
diced jalapeño
chopped brisket

Mix until everything is evenly combined and creamy. Spoon into a Ziplock bag and snip one corner for easy piping.
4) Hollow out the potatoes
Remove potatoes from the grill. Slice a thin piece off the top and bottom so they can stand upright.
Scoop out the center, leaving thick walls so they don’t collapse. Brush the inside with melted butter (optional…but also mandatory in spirit).
5) Wrap + stuff
Wrap each potato with two slices of thick-cut bacon, then secure with toothpicks. Season the outside with more Stew’s BBQ Sweet & Smoky Rub.
Pipe the brisket filling into each potato until loaded.
6) Grill until bacon is crispy
Put the stuffed potatoes back on at 375°F for about 30 minutes, or until the bacon is crisp and rendered.
7) Finish like a legend
In the last few minutes, sprinkle on extra sharp cheddar so it melts over the top. Pull them off, drizzle with Stew's BBQ vinegar-based BBQ sauce, and hit them with green onions.
Tips & Tricks:
Use thick-cut bacon: Thin bacon can shrink and tear before it crisps. Thick cut holds its shape and renders better.
Don’t scoop the potato walls too thin: Think “potato cup,” not “potato paper.”
Chop brisket small: Bite-sized pieces mix better with the cream cheese filling and pipe easier.
Want crispier bacon? Finish for 1–2 minutes with higher heat (carefully) if your grill allows it.
Jalapeño heat control: Remove seeds for mild, keep some seeds for a little kick.
Variations You Can Try:
Spicy version: Add diced pickled jalapeños or a dash of hot sauce to the filling
Extra smoky: Mix a spoonful of BBQ sauce or smoked paprika into the filling
Different cheese: Pepper jack or smoked gouda works awesome here

Storage + Reheating
Store leftovers in an airtight container for up to 3 days.
Reheat best in an air fryer (350°F for 6–10 min) or oven (375°F until hot) to re-crisp the bacon.
Microwave works, but the bacon will go soft (still tasty…just not that crunchy)
